A great light and refreshing vegetable soup that holds for several days in the fridge.

Served

Tomatillos are refreshing fruity and rich in taste especially when using them freshly picked from the CSA farm. The sweetness of the carrots and yellow peppers is balanced with lime juice allowing this soup to satisfy even highest vegan expectations.

Get in Advance:

 

3 stalks of celery, sliced

1 large leek, sliced

2 carrots, sliced

½ red bell pepper, seeded and diced

½ yellow bell pepper, seeded and diced

1 medium Jalapeno pepper, seeded and diced

2 cups tomatillos, husks removed and sliced

½ teaspoon dried oregano

½ teaspoon dried thyme

½ teaspoon dried sage

1 table spoon of cumin

½  tablespoon ground red chili

1 ½  cups low-salt low-fat vegetable broth

1 ½  cups of water

 

Have On Hand:

¼  cup of fresh lime juice

¼ cup of chopped cilantro

For 2-Portions. Prep time 60 min.

 

Cut the vegetables

Cut carrots, celery and leek

cut tomatillos, red and yellow pepper and green Jalapeno pepper

Braise hard vegetables

In large soup pan

Braun celery, leek and carrots for 5-10 min.

Add soft vegetables and spices

Add bell peppers, poblano and tomatillos

Add vegetable broth and water to barely cover vegetables

Add all spices

Bring to a boil and then simmer covered for 20 min

Add juices and cilantro

Before serving add lime juice, orange juice and cilantro.

 

Ready to Serve

Serve hot or cold with toasted whole wheat bread or crisp bread.

Add cut remaining vegetables and spices

Add low-salt low-fat vegetable broth and water and mix together

Simmer until tender

With a lot of tomatillos and leeks from the CSA farm I made again this delicious soup.

The increased proportion of tomatillos made the soup much fruitier and enhanced the sweet/acid interplay.
