This is an easy to prepare any-time meal using only simple readily available ingredients, like onions and split pea staples.

Served

This basic split pea dish provides a satisfying meal without requiring sophisticated ingredients. It can be modified in various ways but will always satisfy even the greatest hunger.

Get in Advance:

 

2 cups of dried split green peas, picked over and rinsed

6 cups of water

6 tablespoons of low-salt low-fat vegetable broth

2 large onions, chopped

1 carrot, peeled and chopped (optional)

2 cloves of garlic, minced

juice of ˝ lemon, zest reserved

(Adapted from and expanded to low-salt low-fat-vegan diet (Esselstyn Plant Diet) from www.101cookbooks.com):

 

For 4 (generous)-to 6 Portion. Prep time: 2hrs.

 

Pre-soak Dried Split Peas

Pick over peas carefully for removing debris and small rocks

Wash extensively under running water

Add 6 cups of water

Bring to a boil for 2 min and let peas soak for 1 hour.

Let cool down, drain peas and preserve the cooking water.

 

Braising of vegetables

Chop the onions

Braise in a large soup skillet until brown (5 min)

Add minced garlic and stir briefly, cool down

Thereafter, add 1 cup of water for solubilizing the caked caramelized layer.

Add carrots and simmer for 5 min with closed lid.

Cook the pea soup

Add 3 cups of soaking water and drained peas

Add vegetable broth powder (6 tablespoons)

Bring to a boil and then simmer for 30 min (until the peas are soft and expanded)

Let cool down, add fluid so that expanded peas are just covered (1 cup)

Puree

Add lemon juice and zest of ˝ lemon

Set 2/3 of the cooked peas aside (in the soaking pot)

Puree with NutiBullet the remaining third and then add the set aside peas and mix the combined parts. Add water as desired for adjusting the consistency of the soup.

Serve

Enrich with vegan Hot Dogs

Serve with salad and bread

This simple pea soup is so easily and quickly prepared from staples and again it came out just right. I enriched it with cut “hot-dogs” making it a satisfying meal, serving maximum ˝ hot dog per serving.

The soaking time and cooking time were just right.

Preparation

1 lb dry Split Peas and 6 cups of water, 2 min boiled and soaked for 1 hr. Drained, with soaking water reserved

2 onion, chopped and braised, 3 garlic cloves, minced, and 1 cup of water for deglazing

Add 2 carrots, chopped cook for 5 min

Add peas, soaking water filled up to 3 cups total with water, 6 Tbs. vegetable broth and cook 30 min.

After cooling down, add water to just cover expanded peas.

 

Add juice and zest of ˝ lemon.

1/3 pureed with NutriBullet

 

The expanded recipe (see to the left) provides 6 portions of 1 ˝ cups each enriched with 1 1/3 vegan hotdogs.
